Vegan Buckwheat Pancakes

Instructions
- Preheat the oven to 350ºF for baking the pancakes.
- If grinding your own buckwheat flour, grind raw buckwheat groats until fine.
- In a large bowl, mash the bananas, then add the buckwheat flour, oil, water, cinnamon, vanilla, baking soda, and vinegar.
- Stir until a thick batter forms.
- For baking, scoop the batter onto a lined baking sheet, shaping into 6 pancakes.
- Bake for about 15 minutes until the centers are firm.
- If frying, pour batter into a greased skillet and cook until bubbles form, then flip and cook through.
- Serve warm with fresh fruit and maple syrup if desired.
