Vegan Buckwheat Pancakes

Ingredients

  • ½ cup buckwheat flour
  • 2 pieces very ripe bananas
  • 2 tablespoons olive or coconut oil
  • 2 tablespoons water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 2 teaspoons apple cider vinegar

Instructions

  1. Preheat the oven to 350ºF for baking the pancakes.
  2. If grinding your own buckwheat flour, grind raw buckwheat groats until fine.
  3. In a large bowl, mash the bananas, then add the buckwheat flour, oil, water, cinnamon, vanilla, baking soda, and vinegar.
  4. Stir until a thick batter forms.
  5. For baking, scoop the batter onto a lined baking sheet, shaping into 6 pancakes.
  6. Bake for about 15 minutes until the centers are firm.
  7. If frying, pour batter into a greased skillet and cook until bubbles form, then flip and cook through.
  8. Serve warm with fresh fruit and maple syrup if desired.
