Instructions
- Whisk together the dry ingredients in a bowl.
- Stir in the plant milk, oil, apple cider vinegar, vanilla, and cinnamon until smooth.
- Allow the batter to rest for 5 minutes.
- Heat a non-stick pan over medium heat and grease it with cooking spray.
- Pour about ½ cup of batter onto the skillet per pancake.
- Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until cooked through.
- Transfer the pancakes to a plate and repeat with the remaining batter.
