Ingredients

  • 1 cup buckwheat flour
  • ¾ cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking powder
  • a pinch salt
  • cups neutral plant milk
  • 3 tablespoons oil
  • teaspoons apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • as needed non-stick cooking spray

Instructions

  1. Whisk together the dry ingredients in a bowl.
  2. Stir in the plant milk, oil, apple cider vinegar, vanilla, and cinnamon until smooth.
  3. Allow the batter to rest for 5 minutes.
  4. Heat a non-stick pan over medium heat and grease it with cooking spray.
  5. Pour about ½ cup of batter onto the skillet per pancake.
  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip the pancakes and cook for another 1-2 minutes until cooked through.
  8. Transfer the pancakes to a plate and repeat with the remaining batter.
