Ingredients

The batter

  • cups buckwheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon sea salt
  • 1 cup unsweetened almond milk
  • 2 large eggs
  • ¼ cup maple syrup
  • 2 tablespoons avocado oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

For serving

  • to taste Strawberry Compote
  • to taste Maple syrup

Instructions

  1. Whisk together the dry ingredients in a large bowl.
  2. In a medium bowl, whisk together the wet ingredients.
  3. Combine the wet and dry mixtures until just combined.
  4. Heat a nonstick skillet and brush with oil.
  5. Pour batter into the skillet and cook until puffed and cooked through, flipping halfway.
