Ingredients

  • 1 cup buckwheat flour or gluten free oat flour
  • ¼ cup plant-based protein powder or additional oat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 ¼–1 ⅓ cups non-dairy milk
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 (100 grams) ripe banana
  • 4 tablespoons melted refined coconut oil or naturally refined avocado oil
  • to taste none maple syrup (optional sweetener)
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Whisk together the dry ingredients in a medium bowl.
  2. In a separate bowl, mix the non-dairy milk and apple cider vinegar, allowing it to curdle.
  3. Blend the curdled mixture with the banana.
  4. Combine the wet and dry ingredients, mixing gently.
  5. Let the batter rest for 5 minutes while heating the waffle iron.
  6. Grease the waffle iron and pour in the batter, cooking for 2-4 minutes.
  7. Repeat until all batter is used and let the waffles cool.
