Instructions
- Preheat the waffle iron.
- In a large bowl, combine buckwheat flour, baking powder, and salt, whisking to break up clumps.
- Add the egg, melted coconut oil, maple syrup, vanilla extract, and water, whisking until smooth.
- Grease the waffle iron and pour ½ cup of batter into the center.
- Cook until the 'ready' light comes on, then check for doneness, cooking an additional 1-2 minutes if needed.
- Carefully remove the waffle and repeat with the remaining batter to make 4 waffles.
- Serve warm with desired toppings.
