Ingredients

The waffles

  • 1 cup buckwheat flour
  • 1 tablespoon sugar
  • 1 ¼ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 ¼ cups buttermilk
  • ¼ cup melted butter or coconut oil
  • 1 large egg

Toppings

  • to taste maple syrup
  • to taste almond butter
  • to taste fresh banana slices

Instructions

  1. Preheat the waffle iron and optionally an oven to keep the waffles warm.
  2. In a bowl, whisk together the dry ingredients: buckwheat flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk the wet ingredients: buttermilk, melted butter, and egg.
  4. Combine the wet and dry mixtures, stirring until just combined with a few lumps remaining.
  5. Let the batter rest for 5 to 10 minutes if desired for lighter waffles.
  6. Pour batter onto the hot waffle iron and cook until lightly crisp and steaming.
  7. Serve immediately or keep warm in the oven. Avoid stacking to maintain crispness.
