Ingredients

The batter

  • 2 cups gluten-free flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 3 pcs eggs
  • 1 ½ cups milk
  • 6 to 8 tbsp melted ghee or butter
  • ½ pcs banana (thinly sliced)

For serving

  • to taste pure maple syrup
  • to taste fresh fruit

Instructions

  1. Whisk together the dry ingredients in a medium bowl.
  2. In a large bowl, stir together the wet ingredients, ensuring the ghee is not too hot.
  3. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Fold in the thinly sliced banana.
  5. Pour about ⅓ cup of batter onto a waffle iron and bake until golden brown.
  6. Repeat until all batter is used, yielding 6 waffles.
  7. Top with fruit and a little maple syrup before serving.
