Instructions
- Combine the dry ingredients in a large bowl and whisk together.
- In another bowl, whisk the eggs and then add the milk, melted coconut oil or butter, mashed banana, and vanilla extract, mixing until blended.
- Pour the wet ingredients into the dry ingredients and stir until combined, letting the batter rest for 10 minutes.
- Preheat the waffle iron while the batter rests.
- After resting, gently stir the batter again and pour it onto the preheated waffle iron.
- Cook until the waffles are golden and crisp, then transfer to a cooling rack.
- Keep waffles warm in a low oven if desired, and repeat with remaining batter.
- Serve with your choice of toppings.
