Ingredients

The batter

  • 2 ¼ cups oat flour
  • 3 tablespoons coconut sugar or brown sugar
  • 2 tablespoons arrowroot starch or cornstarch
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 3 large eggs
  • 1 cup milk of choice
  • scant ½ cup melted coconut oil or unsalted butter
  • ¾ cup mashed ripe bananas
  • 2 teaspoons vanilla extract

Suggested toppings

  • to taste thinly sliced banana
  • to taste maple syrup or honey
  • to taste nut butter and/or toasted nuts
  • to taste whipped cream or coconut whipped cream

Instructions

  1. Combine the dry ingredients in a large bowl and whisk together.
  2. In another bowl, whisk the eggs and then add the milk, melted coconut oil or butter, mashed banana, and vanilla extract, mixing until blended.
  3. Pour the wet ingredients into the dry ingredients and stir until combined, letting the batter rest for 10 minutes.
  4. Preheat the waffle iron while the batter rests.
  5. After resting, gently stir the batter again and pour it onto the preheated waffle iron.
  6. Cook until the waffles are golden and crisp, then transfer to a cooling rack.
  7. Keep waffles warm in a low oven if desired, and repeat with remaining batter.
  8. Serve with your choice of toppings.
