Ingredients

  • 2 cups gluten free 1:1 flour
  • 1 to 2 Tablespoons raw sugar or sugar substitute
  • 1 Tablespoon baking powder
  • ½ teaspoon kosher salt
  • 1 ⅔ cups warm non-dairy milk
  • cup unsalted butter (melted) or refined avocado oil or coconut oil
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Sift or whisk together the gluten free flour, sugar, baking powder, and salt in a medium bowl.
  2. In a separate large bowl, whisk together the warm non-dairy milk, melted butter, eggs, and vanilla extract.
  3. Gradually add the dry mixture to the wet ingredients and whisk until just combined. Let the batter rest for 10 minutes.
  4. Preheat the waffle maker and lightly grease it.
  5. Pour the batter into the preheated waffle iron and cook until golden and crisp.
  6. Repeat the cooking process until all the batter is used.
  7. Store any cooled leftovers in an airtight container in the fridge for up to 3 days.
