Simple Gluten Free Waffles

The strawberry chia compote

Instructions
- Preheat the waffle iron to medium heat.
- In a large bowl, mix the dry ingredients: almond flour, coconut flour, baking soda, and salt.
- In a medium bowl, whisk the eggs, then add honey, almond milk, and vanilla extract, mixing until smooth.
- Combine the wet and dry ingredients, then add melted coconut oil and mix until smooth.
- Spray the waffle iron with coconut oil spray and pour in about ⅓ to ½ cup of batter.
- Close and cook for 1.5 to 3 minutes, depending on your waffle iron, and repeat with the remaining batter.
- For the compote, combine strawberries, orange juice, salt, and honey in a saucepan over medium/high heat and bring to a boil.
- Reduce heat to low and simmer for 10 minutes, stirring and mashing the strawberries occasionally.
- Remove from heat, stir in chia seeds, and refrigerate until ready to serve.
