Ingredients

The waffles

  • 1 cup super-fine almond flour
  • ¼ cup coconut flour
  • ½ teaspoon baking soda
  • pinch salt
  • 3 large eggs
  • 2 tablespoons melted coconut oil
  • 3 tablespoons honey
  • ¾ cup unsweetened almond milk
  • 1 teaspoon vanilla extract

The strawberry chia compote

  • 1 cup fresh strawberries, diced
  • ¼ cup orange juice
  • 2 tablespoons honey
  • pinch salt
  • 1 tablespoon chia seeds

Instructions

  1. Preheat the waffle iron to medium heat.
  2. In a large bowl, mix the dry ingredients: almond flour, coconut flour, baking soda, and salt.
  3. In a medium bowl, whisk the eggs, then add honey, almond milk, and vanilla extract, mixing until smooth.
  4. Combine the wet and dry ingredients, then add melted coconut oil and mix until smooth.
  5. Spray the waffle iron with coconut oil spray and pour in about ⅓ to ½ cup of batter.
  6. Close and cook for 1.5 to 3 minutes, depending on your waffle iron, and repeat with the remaining batter.
  7. For the compote, combine strawberries, orange juice, salt, and honey in a saucepan over medium/high heat and bring to a boil.
  8. Reduce heat to low and simmer for 10 minutes, stirring and mashing the strawberries occasionally.
  9. Remove from heat, stir in chia seeds, and refrigerate until ready to serve.
