Ingredients

The batter

  • 2.5 cups gluten-free old fashioned oats
  • 2 tablespoons baking powder
  • ½ teaspoon salt

  • 2 large eggs
  • 1 cup almond milk
  • 2 tablespoons maple syrup

Toppings

  • to taste butter
  • to taste extra maple syrup

Instructions

  1. Blend the oats in a blender until they form a flour-like consistency.
  2. Add baking powder, salt, and cinnamon to the blended oats and pulse to combine.
  3. In a separate bowl, whisk the eggs until smooth, then mix in the milk and maple syrup.
  4. Combine the oatmeal mixture with the egg mixture and stir until evenly combined, then let it rest for 5 minutes.
