Instructions
- Blend the gluten-free oats until they reach a flour-like consistency.
- Add egg, non-dairy milk, applesauce, peanut butter, baking powder, salt, and cinnamon to the blender and blend until combined.
- Add apple cider vinegar and vanilla, then blend until a thick batter forms, scraping down the sides as needed.
- Let the batter rest for 15 to 20 minutes.
- Preheat the waffle iron to medium-high and spray with non-stick cooking spray or brush with melted butter.
- Pour half the batter into the waffle iron and cook for about 5 minutes until brown and fluffy.
- Repeat with the remaining batter.
- Serve with optional toppings.
