Ingredients

The batter

  • ¾ to 1 cup gluten free rolled oats
  • 1 large egg
  • ½ cup unsweetened almond or non-dairy milk
  • ¼ cup unsweetened applesauce
  • 3 Tablespoons natural peanut butter
  • 1 teaspoon baking powder
  • pinch kosher salt
  • pinch cinnamon
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon pure vanilla extract

Optional toppings

  • honey
  • maple syrup
  • berries
  • sliced banana
  • dark chocolate chips

Instructions

  1. Blend the gluten-free oats until they reach a flour-like consistency.
  2. Add egg, non-dairy milk, applesauce, peanut butter, baking powder, salt, and cinnamon to the blender and blend until combined.
  3. Add apple cider vinegar and vanilla, then blend until a thick batter forms, scraping down the sides as needed.
  4. Let the batter rest for 15 to 20 minutes.
  5. Preheat the waffle iron to medium-high and spray with non-stick cooking spray or brush with melted butter.
  6. Pour half the batter into the waffle iron and cook for about 5 minutes until brown and fluffy.
  7. Repeat with the remaining batter.
  8. Serve with optional toppings.
