Ingredients

The batter

  • 2 ⅔ cups Gluten Free Flour Blend (with xanthan gum)
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar of choice
  • ¾ teaspoon sea salt
  • ½ teaspoon baking soda
  • 1 tablespoon ground flax seeds (optional)
  • ¼ cup Peanut Butter
  • ¼ cup butter (or Earth Balance)
  • 2 cups buttermilk (or almond milk with lemon juice)
  • 3 large eggs

The topping

  • ¼ cup peanut butter
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 200°F and the waffle iron to medium-high heat.
  2. In a large bowl, whisk together the gluten-free flour, cocoa powder, sugar, sea salt, baking soda, and flax seeds.
  3. In a blender, combine the peanut butter and melted butter, processing for 1 minute.
  4. Add the buttermilk and eggs to the blender and blend for another minute.
  5. Combine the liquid mixture with the dry ingredients, stirring until just combined.
  6. Brush the waffle iron with butter and pour about ¾ cup of batter into the iron.
  7. Cook the waffles until golden brown and transfer them to the warm oven.
  8. In a small saucepan, heat the peanut butter and maple syrup over low heat until melted, whisking to combine.
  9. Drizzle the warm peanut butter and syrup over the waffles before serving.
