Instructions
- Preheat the oven to 200°F and the waffle iron to medium-high heat.
- In a large bowl, whisk together the gluten-free flour, cocoa powder, sugar, sea salt, baking soda, and flax seeds.
- In a blender, combine the peanut butter and melted butter, processing for 1 minute.
- Add the buttermilk and eggs to the blender and blend for another minute.
- Combine the liquid mixture with the dry ingredients, stirring until just combined.
- Brush the waffle iron with butter and pour about ¾ cup of batter into the iron.
- Cook the waffles until golden brown and transfer them to the warm oven.
- In a small saucepan, heat the peanut butter and maple syrup over low heat until melted, whisking to combine.
- Drizzle the warm peanut butter and syrup over the waffles before serving.
