Ingredients

  • 1 ¾ cup gluten-free all-purpose flour
  • 3 Tbsp coconut sugar
  • 1 ½ tsp ground cinnamon
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup natural peanut butter
  • ¼ cup avocado oil or olive oil
  • 2 whole eggs
  • 2 ½ tsp pure vanilla extract
  • 1 ¾ cup Kalona Supernatural Organic Plain Kefir
  • 2 ripe bananas, mashed

Instructions

  1. Mix the dry ingredients in one bowl and set aside.
  2. In another bowl, whisk together the wet ingredients until well combined.
  3. Combine the wet and dry ingredients and mix thoroughly.
  4. Preheat the waffle iron and grease it with non-stick spray.
  5. Pour the batter onto the waffle iron and cook according to the manufacturer's instructions.
  6. Let the waffles sit for a few minutes before serving, and enjoy with toppings of your choice.
