Gluten-Free Banana Rice Waffles

Ingredients

  • 2 large eggs
  • 1 ¼ cups cooked white rice
  • 1 medium ripe banana
  • 3 tbsp refined avocado oil or coconut oil
  • 3 tbsp raw sugar
  • ½ tsp baking powder
  • ¼ tsp kosher salt
  • 2 tbsp tapioca flour or cornstarch
  • ½ to ⅔ cup almond milk
  • a pinch cinnamon (optional)

Instructions

  1. Cook the rice according to package directions.
  2. In a blender, combine all ingredients except for the almond milk and blend until mixed.
  3. Add almond milk gradually and blend until smooth.
  4. Preheat and grease the waffle iron.
  5. Pour the batter into the waffle iron and cook until golden brown, about 3-5 minutes per waffle.
  6. Serve hot or let cool and freeze for later.
