Ingredients

  • 2 cups whole wheat flour
  • 4 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp kosher salt
  • 2 large eggs, beaten
  • cups almond milk
  • ½ cup unsweetened applesauce
  • 1 medium ripe banana, mashed
  • Tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat the waffle iron and coat it with non-stick cooking spray.
  2. In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk the eggs until fluffy and bubbles form, then mix in the milk, applesauce, mashed banana, maple syrup, and vanilla.
  4. Pour the wet mixture into the dry ingredients and mix until just combined, leaving some lumps.
  5. Spoon the batter onto the preheated waffle iron and cook until golden brown.
  6. Repeat until all batter is used and serve immediately with desired toppings.
