Ingredients

  • 1 teaspoon pure vanilla extract
  • 3 medium very ripe bananas

Instructions

  1. Preheat the waffle iron.
  2. Sift together the flours, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl.
  3. In a skillet, melt the butter over medium heat, whisking frequently until it turns brown and has a nutty aroma; let it cool.
  4. In a medium bowl, whisk together the egg yolks, buttermilk, brown butter, honey, and vanilla, then combine with the dry ingredients.
  5. Mash the bananas and stir them into the batter.
