Ingredients

  • 1 ½ cup white whole wheat flour or regular whole wheat flour

  • 2 teaspoons aluminum-free baking powder

  • ¼ teaspoon nutmeg
  • ¾ cup chopped walnuts or pecans
  • cup melted coconut oil
  • ¾ cup milk of choice, lukewarm
  • ¾ cup overripe mashed bananas (about 2 small bananas)
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

  1. 1. Preheat the waffle iron and oven to keep waffles warm.
  2. 2. In a bowl, whisk together the dry ingredients.
  3. 3. In another bowl, combine melted coconut oil and milk, then microwave until lukewarm.
  4. 4. Whisk in mashed banana, egg, and vanilla extract into the wet mixture.
  5. 5. Combine the wet and dry ingredients, stirring until just mixed.
  6. 6. Pour batter onto the waffle iron and cook until golden and steaming stops.
  7. 7. Transfer waffles to a rack or baking sheet to keep warm.
