Instructions
- 1. Preheat the waffle iron and oven to keep waffles warm.
- 2. In a bowl, whisk together the dry ingredients.
- 3. In another bowl, combine melted coconut oil and milk, then microwave until lukewarm.
- 4. Whisk in mashed banana, egg, and vanilla extract into the wet mixture.
- 5. Combine the wet and dry ingredients, stirring until just mixed.
- 6. Pour batter onto the waffle iron and cook until golden and steaming stops.
- 7. Transfer waffles to a rack or baking sheet to keep warm.
- 8. Serve topped with sliced bananas and maple syrup.
