Ingredients

The waffles

  • cups ground gluten free oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cups almond milk
  • 1 tablespoon maple syrup
  • 3 tablespoons peanut butter

The strawberry jelly compote

  • cups strawberries
  • 3 teaspoons lemon juice
  • 4 tablespoons maple syrup

Instructions

  1. 1. Preheat the waffle maker.
  2. 2. In a large bowl, mix the ground oats, baking powder, baking soda, and salt.
  3. 3. Add the almond milk, maple syrup, and peanut butter to the dry ingredients and whisk until combined.
  4. 4. Pour ⅓ of the batter into the heated waffle maker and cook according to the manufacturer's instructions.
  5. 5. For the strawberry jelly compote, combine the strawberries, lemon juice, and maple syrup in a pan over high heat.
  6. 6. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, stirring often.
  7. 7. Once the compote is reduced to your liking, remove from heat and cool it in an ice bath for 3 minutes.
