Instructions
- 1. Preheat the waffle maker.
- 2. In a large bowl, mix the ground oats, baking powder, baking soda, and salt.
- 3. Add the almond milk, maple syrup, and peanut butter to the dry ingredients and whisk until combined.
- 4. Pour ⅓ of the batter into the heated waffle maker and cook according to the manufacturer's instructions.
- 5. For the strawberry jelly compote, combine the strawberries, lemon juice, and maple syrup in a pan over high heat.
- 6. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, stirring often.
- 7. Once the compote is reduced to your liking, remove from heat and cool it in an ice bath for 3 minutes.
- 8. Serve the waffles topped with the strawberry jelly compote.
