Ingredients

Waffles

  • cup white whole wheat flour
  • 1 cup quick cooking oats
  • 3 teaspoons baking powder

  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs, lightly beaten
  • cups milk
  • 6 tablespoons coconut oil, melted
  • 2 tablespoons brown sugar

Strawberry Vanilla Compote

  • 16 oz. strawberries, quartered
  • ¼ cup water
  • ¼ cup raw sugar
  • zest from 1 lemon lemon
  • juice from 1 lemon lemon
  • 1 bean vanilla from Madagascar Vanilla Stalk
  • 1 tablespoon arrowroot

Instructions

  1. In a small saucepan, combine water, raw sugar, lemon juice, lemon zest, vanilla bean, and arrowroot; whisk together.
  2. Add strawberries and bring to a simmer; cook for 5 minutes until softened and the sauce thickens.
  3. In a large bowl, mix white whole wheat flour, oats, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, combine eggs, milk, coconut oil, and brown sugar.
  5. Gradually add the wet mixture to the dry ingredients and stir until combined.
  6. Pour batter into a preheated waffle maker and cook until crisp and browned.
  7. Serve waffles topped with the strawberry vanilla compote.
