Ingredients

The waffles

  • ¾ cup cornmeal, medium or fine ground
  • ¾ cup unbleached all purpose flour
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 cup buttermilk
  • cup maple syrup
  • 2 large eggs
  • 3 Tbsp melted butter or neutral oil
  • more for greasing butter or oil

The strawberry sauce (optional)

  • 2 cups halved strawberries
  • 1 tsp olive oil or other oil
  • 2 Tbsp maple syrup
  • a pinch salt

Instructions

  1. Preheat the oven to 350°F for the strawberry sauce.
  2. Whisk together the cornmeal, flour, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk the buttermilk, maple syrup, eggs, and melted butter or oil.
  4. Combine the wet and dry ingredients, stirring gently until just combined, and let it hydrate for about 5 minutes.
  5. Grease the waffle iron with butter or oil and pour about ⅓ cup of batter into the center.
  6. Cook according to the waffle iron's instructions.
  7. For the strawberry sauce, toss strawberries with oil, maple syrup, and salt on a baking sheet and roast for 20 minutes.
  8. Serve waffles with strawberry sauce or savory toppings like arugula, vinaigrette, a fried egg, and feta cheese.
