Instructions
- Preheat the oven to 350°F for the strawberry sauce.
- Whisk together the cornmeal, flour, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk the buttermilk, maple syrup, eggs, and melted butter or oil.
- Combine the wet and dry ingredients, stirring gently until just combined, and let it hydrate for about 5 minutes.
- Grease the waffle iron with butter or oil and pour about ⅓ cup of batter into the center.
- Cook according to the waffle iron's instructions.
- For the strawberry sauce, toss strawberries with oil, maple syrup, and salt on a baking sheet and roast for 20 minutes.
- Serve waffles with strawberry sauce or savory toppings like arugula, vinaigrette, a fried egg, and feta cheese.
