Ingredients

  • cups all-purpose flour

  • 1 teaspoon kosher salt

  • 2 cups buttermilk
  • 2 large egg yolks
  • 12 tablespoons unsalted butter (melted and cooled)
  • 2 teaspoons vanilla extract

Egg White Mixture

  • 2 large egg whites
  • 6 tablespoons white sugar

Salted Honey Butter and Toppings

  • ½ cup unsalted butter (at room temperature)
  • 2 teaspoons good-quality honey
  • 1 pinch flaky sea salt
  • 1 peach sliced (as garnish)
  • to taste pure maple syrup (as garnish)

Instructions

  1. Make the salted honey butter by mixing softened butter, honey, and salt until smooth.
  2. Preheat the oven to 200°F and prepare a cooling rack on a baking sheet.
  3. In a large bowl, whisk together the dry ingredients: flour, cornstarch, salt, baking powder, and baking soda.
  4. In a separate measuring cup, whisk together the wet ingredients: buttermilk, egg yolks, melted butter, and vanilla.
  5. Combine the wet and dry mixtures until just combined and set aside.
  6. Beat the egg whites in another bowl until foamy, then add sugar and beat until glossy peaks form.
  7. Fold the egg whites into the batter until just combined.
  8. Cook the batter in a preheated waffle iron according to the manufacturer's instructions.
  9. Transfer cooked waffles to a plate or keep warm in the oven while making the remaining waffles.
  10. Serve waffles with honey butter, sliced peaches, and maple syrup.
