Ingredients

The batter

  • ¾ cup all-purpose flour
  • ¼ cup corn starch
  • 1 tablespoon granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • cup vegetable oil
  • 1 large egg
  • ¾ teaspoon vanilla extract

Optional toppings

  • melted butter
  • syrup

Instructions

  1. Combine all dry ingredients in a large bowl and whisk together.
  2. Make a well in the center and add the wet ingredients, then stir until just combined.
  3. Let the batter rest for about 30 minutes.
  4. Preheat the waffle iron and cook the waffles according to the manufacturer's instructions.
  5. Keep cooked waffles warm in a 200°F oven while cooking the rest.
  6. Top with melted butter and syrup if desired, and enjoy.
