Instructions
- Preheat the waffle maker and the oven to keep waffles warm.
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
- In another bowl, whisk the egg yolks, melted butter, and sugar, then add buttermilk and vanilla.
- Combine the wet and dry ingredients without over-mixing.
- Whip the egg whites until stiff peaks form and gently fold them into the batter.
- Grease the waffle maker and pour about ⅓ cup of batter into each well.
- Cook the waffles until golden brown, about 4-5 minutes, and keep warm in the oven.
- Serve immediately with butter and maple syrup or your choice of toppings.
