Ingredients

The batter

  • 1 and ¾ cups all-purpose flour
  • 1 and ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs, separated
  • ½ cup unsalted butter, melted
  • cup granulated sugar
  • 1 and ¾ cups buttermilk
  • 1 teaspoon pure vanilla extract

Toppings

  • to taste butter
  • to taste maple syrup

Instructions

  1. Preheat the waffle maker and the oven to keep waffles warm.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk the egg yolks, melted butter, and sugar, then add buttermilk and vanilla.
  4. Combine the wet and dry ingredients without over-mixing.
  5. Whip the egg whites until stiff peaks form and gently fold them into the batter.
  6. Grease the waffle maker and pour about ⅓ cup of batter into each well.
  7. Cook the waffles until golden brown, about 4-5 minutes, and keep warm in the oven.
  8. Serve immediately with butter and maple syrup or your choice of toppings.
