Ingredients

The batter

  • 2 cups all-purpose flour

  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 large eggs
  • cups buttermilk
  • ⅓ - ½ cup butter, melted
  • 1 teaspoon vanilla extract

For serving

  • to taste whipped cream
  • to taste berries
  • to taste syrup

Instructions

  1. Preheat the waffle iron and the oven to keep the waffles warm.
  2. In a bowl, mix the dry ingredients: flour, salt, sugars, baking powder, and baking soda.
  3. In another bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a separate bowl, beat the egg whites until stiff and fold them into the batter.
  6. Pour the batter into the preheated waffle iron and cook until golden brown.
  7. Keep the cooked waffles warm in the oven while you finish the rest.
