Basic Waffles

Ingredients

The batter

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 3 T sugar
  • 3 large eggs
  • 2 T butter, melted
  • 2 cups buttermilk

For cooking

  • as needed cooking spray for the waffle iron

Instructions

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. In a medium bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, baking powder, salt, and sugar.
  3. In another bowl, whisk together the eggs and melted butter, then whisk in the buttermilk.
  4. Combine the wet ingredients with the dry ingredients and whisk until just mixed. Let the batter rest for 5 minutes.
  5. Spray the waffle iron with cooking spray.
  6. Cook the waffles according to the waffle iron's instructions.
  7. Serve immediately or keep warm in a 200°F oven until ready to serve. Cool any leftovers on a cooling rack before freezing.
