Ingredients

The Waffles

  • 1 cup all-purpose flour
  • 1 cup yellow stone ground cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs, slightly beaten
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted and slightly cooled

The Blackberry Compote

  • 16 ounces fresh or frozen blackberries
  • 2 tablespoons sugar
  • 1 tablespoon water (if using fresh berries)

Instructions

  1. Preheat the waffle iron.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  3. In a medium bowl, combine the buttermilk, eggs, honey, and vanilla extract.
  4. Pour the liquid ingredients over the dry ingredients and stir until just combined, then stir in the melted butter.
  5. Grease the hot waffle iron with nonstick cooking spray and spoon out ½ cup of batter onto the hot iron.
  6. Close the lid and bake until the waffles are browned and crisp.
  7. Meanwhile, make the blackberry compote by cooking blackberries, sugar, and water in a saucepan over medium-high heat until the berries are soft and juicy.
  8. Serve the waffles with blackberry compote and whipped cream, if desired.
