The Blackberry Compote

Instructions
- Preheat the waffle iron.
- In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
- In a medium bowl, combine the buttermilk, eggs, honey, and vanilla extract.
- Pour the liquid ingredients over the dry ingredients and stir until just combined, then stir in the melted butter.
- Grease the hot waffle iron with nonstick cooking spray and spoon out ½ cup of batter onto the hot iron.
- Close the lid and bake until the waffles are browned and crisp.
- Meanwhile, make the blackberry compote by cooking blackberries, sugar, and water in a saucepan over medium-high heat until the berries are soft and juicy.
- Serve the waffles with blackberry compote and whipped cream, if desired.
