Ingredients

The batter

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 tablespoon granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • cup vegetable oil
  • 1 large egg
  • ¾ teaspoon vanilla extract
  • cup blueberries

Optional toppings

  • to taste melted butter
  • to taste syrup

Instructions

  1. Mix the dry ingredients in a large bowl.
  2. Make a well in the dry ingredients and add the wet ingredients, stirring until just combined.
  3. Allow the batter to rest for 30 minutes.
  4. Fold in the blueberries gently after resting.
  5. Preheat the waffle iron and cook the batter according to the manufacturer's instructions.
  6. Transfer cooked waffles to a warm oven while cooking the remaining batter.
  7. Serve with melted butter and syrup if desired.
