Ingredients

Dry Ingredients

  • cup white whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • teaspoon salt
  • 1 pint fresh blueberries

Wet Ingredients

  • 1 cup mashed banana
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 2 tablespoons coconut oil
  • 1 cup unsweetened almond milk

Instructions

  1. Preheat the waffle iron to medium heat.
  2. Mix all dry ingredients in a large bowl, then add wet ingredients except for the coconut oil.
  3. Partially melt the coconut oil and mix it into the batter until smooth.
  4. Spray the waffle iron with coconut oil cooking spray, scoop in about ⅔ cup of batter, close the waffle iron, flip, and cook for about 1 minute and 30 seconds.
  5. Enjoy your waffles!
