Instructions
- Preheat the waffle maker and spray the griddle with PAM.
- Beat the egg whites until soft peaks form and set aside.
- In a large bowl, mix egg yolks, sugar, vanilla extract, almond extract, lemon zest, and milk.
- Add the dry ingredients (all purpose flour, whole wheat flour, baking powder, and sea salt) to the wet ingredients and mix well.
- Fold in the melted butter, fresh blueberries, and the beaten egg whites until combined.
- Pour ½ to ¾ cup of batter into the greased waffle maker and cook until golden brown, about 3-4 minutes.
- Serve with fresh blueberries and maple syrup or honey.
