Whole Wheat Lemon Blueberry Waffles

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • cups 2% milk
  • 2 units eggs, separated
  • 1 teaspoon vanilla extract
  • ¾ teaspoon almond extract
  • 3 tablespoons sugar
  • 1 unit zest of one lemon
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt
  • 1 stick unsalted butter, melted
  • ½ cup fresh blueberries
  • 1 spray PAM for spraying

Instructions

  1. Preheat the waffle maker and spray the griddle with PAM.
  2. Beat the egg whites until soft peaks form and set aside.
  3. In a large bowl, mix egg yolks, sugar, vanilla extract, almond extract, lemon zest, and milk.
  4. Add the dry ingredients (all purpose flour, whole wheat flour, baking powder, and sea salt) to the wet ingredients and mix well.
  5. Fold in the melted butter, fresh blueberries, and the beaten egg whites until combined.
  6. Pour ½ to ¾ cup of batter into the greased waffle maker and cook until golden brown, about 3-4 minutes.
  7. Serve with fresh blueberries and maple syrup or honey.
