Ingredients

  • 1 ½ cups gluten-free flour
  • ½ cup oat flour
  • ½ cup almond flour
  • 1 Tbsp cornstarch
  • ½ tsp sea salt
  • 1 Tbsp baking powder
  • 3 Tbsp organic cane sugar
  • 1 ½ cups light coconut milk
  • 1 tsp vanilla extract (optional)
  • ¼ cup vegan butter (melted)
  • cup aquafaba

Instructions

  1. In a large mixing bowl, combine the gluten-free flour, oat flour, almond flour, cornstarch, salt, baking powder, and sugar, and whisk together.
  2. In a separate bowl, whisk together the coconut milk, vanilla extract (if using), and melted vegan butter until well combined.
  3. In a small bowl, whisk the aquafaba until it becomes light and foamy.
  4. Add the wet ingredients to the dry ingredients and mix until just combined, then gently fold in the whipped aquafaba.
  5. Let the batter rest for about 5 minutes while preheating the waffle iron.
  6. Pour about 1 cup of batter into the preheated waffle iron and cook for 5-7 minutes or until golden brown.
  7. Remove the waffle and keep warm in a low oven while repeating with the remaining batter.
  8. Serve immediately with your favorite toppings.
