Instructions
- In a large mixing bowl, combine the gluten-free flour, oat flour, almond flour, cornstarch, salt, baking powder, and sugar, and whisk together.
- In a separate bowl, whisk together the coconut milk, vanilla extract (if using), and melted vegan butter until well combined.
- In a small bowl, whisk the aquafaba until it becomes light and foamy.
- Add the wet ingredients to the dry ingredients and mix until just combined, then gently fold in the whipped aquafaba.
- Let the batter rest for about 5 minutes while preheating the waffle iron.
- Pour about 1 cup of batter into the preheated waffle iron and cook for 5-7 minutes or until golden brown.
- Remove the waffle and keep warm in a low oven while repeating with the remaining batter.
- Serve immediately with your favorite toppings.
