Ingredients

The waffle batter

  • 2 pieces flax eggs
  • 2 tbsp ground flax seeds
  • 6 tbsp water
  • 2 cups all-purpose flour
  • 3 tbsp white sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon (optional)
  • ½ tsp salt
  • 1 ¼ cups plain almond milk
  • cup canola oil
  • 1 tsp vanilla extract

Optional toppings

  • to taste fresh berries
  • to taste maple syrup

Instructions

  1. 1. Preheat and grease the waffle iron.
  2. 2. Prepare the flax eggs and let them sit for at least 10 minutes.
  3. 3. In a bowl, mix the dry ingredients and set aside.
  4. 4. In another bowl, combine the flax eggs, almond milk, canola oil, and vanilla extract.
  5. 5. Slowly add the wet mixture to the dry ingredients and stir until just combined.
  6. 6. Cook the batter in the waffle iron according to the manufacturer's instructions.
  7. 7. Serve immediately with toppings of your choice.
