Ingredients

The batter

  • 1 cup unsweetened almond or coconut milk
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons ground flaxseed (flaxmeal)
  • ½ cup Bob's Red Mill All Purpose Baking Flour
  • ¼ cup Bob's Red Mill Organic Coconut Flour
  • 1 tablespoon baking powder
  • ¼ teaspoon sea salt
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract

For serving

  • to taste strawberries
  • to taste vegan whipped cream

Instructions

  1. Mix the almond or coconut milk with apple cider vinegar and let sit to create vegan buttermilk.
  2. Whisk in the ground flaxseed and refrigerate for 15 minutes until thick.
  3. In a separate bowl, combine the baking flour, coconut flour, baking powder, and sea salt.
  4. Add the nut milk mixture to the dry ingredients along with coconut oil, maple syrup, and vanilla extract, mixing until combined.
  5. Preheat and grease the waffle maker.
  6. Pour batter into the waffle maker and cook until done.
  7. Keep waffles warm in the oven while cooking the remaining batter.
  8. Serve with strawberries and vegan whipped cream.
