Ingredients

The batter

  • cups unsweetened soy or coconut milk, or any vegan milk
  • 2 teaspoons apple cider vinegar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt
  • 1 tablespoon brown sugar or maple syrup
  • ¼ cup melted coconut oil or melted vegan butter
  • ½ teaspoon vanilla extract

Toppings

  • to taste fruits or a dollop of vegan whipped cream

Instructions

  1. Prepare the vegan buttermilk by mixing the nut milk and apple cider vinegar in a bowl and letting it sit for 5 minutes.
  2. Sift together the flour, baking powder, and salt in a large bowl.
  3. Add the sugar, melted coconut oil, and buttermilk mixture to the dry ingredients and mix gently until just combined, leaving some lumps.
  4. Preheat your waffle maker according to your desired crispiness level.
  5. Scoop ½ cup of batter into the greased waffle maker and cook until the steam stops completely.
  6. Keep the cooked waffles warm in an oven until all batter is used.
  7. Serve with your favorite toppings.
