Vegan Whole Grain Waffles

Instructions
- Preheat the oven to 375°F (190°C) if roasting stone fruit and slice the fruit into thin wedges.
- Place the fruit on a baking sheet, toss with oil and sugar if desired, and roast for 15-20 minutes until soft.
- In a large bowl, mix flaxseed meal and water to create a flax egg and let it rest for 5 minutes.
- Add molasses, applesauce, oil, sucanat, cinnamon, baking powder, salt, and whisk together.
- Stir in almond milk and then gently mix in the flour and almond meal until just combined.
- Let the batter rest while preheating the waffle iron to a high setting.
- Spray the waffle iron with non-stick spray and pour about ½ cup of batter onto the center.
- Cook according to the manufacturer's instructions, then place waffles on a cooling rack.
- Transfer waffles to a warm oven until ready to serve, topped with roasted fruit, almond butter, and maple syrup.
