Vegan Whole Grain Waffles

Ingredients

The batter

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • 1 Tbsp molasses
  • ¼ cup unsweetened applesauce
  • 1 Tbsp avocado or coconut oil
  • ½ Tbsp baking powder
  • 1 pinch sea salt
  • 3 Tbsp sucanat
  • ½ tsp cinnamon
  • ¾ cup unsweetened almond milk
  • 1 cup whole wheat pastry flour
  • ¼ cup almond meal or oat flour

Optional toppings

  • to taste stone fruit of choice
  • to taste almond butter
  • to taste maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C) if roasting stone fruit and slice the fruit into thin wedges.
  2. Place the fruit on a baking sheet, toss with oil and sugar if desired, and roast for 15-20 minutes until soft.
  3. In a large bowl, mix flaxseed meal and water to create a flax egg and let it rest for 5 minutes.
  4. Add molasses, applesauce, oil, sucanat, cinnamon, baking powder, salt, and whisk together.
  5. Stir in almond milk and then gently mix in the flour and almond meal until just combined.
  6. Let the batter rest while preheating the waffle iron to a high setting.
  7. Spray the waffle iron with non-stick spray and pour about ½ cup of batter onto the center.
  8. Cook according to the manufacturer's instructions, then place waffles on a cooling rack.
  9. Transfer waffles to a warm oven until ready to serve, topped with roasted fruit, almond butter, and maple syrup.
