Ingredients

  • 1 ¼ cup almond milk
  • 1 tsp white or apple cider vinegar
  • ¼ cup melted vegan butter
  • 1 ½ tsp pure vanilla extract
  • 2 Tbsp agave nectar or maple syrup
  • 1 cup brown rice flour
  • ½ cup gluten-free rolled oats
  • ½ cup potato starch
  • ¼ cup tapioca flour
  • 1 Tbsp flaxseed meal
  • 1 pinch salt
  • 1 ½ tsp baking powder
  • 2 Tbsp sugar

Instructions

  1. Combine almond milk and vinegar and let it sit to curdle.
  2. Add melted butter, vanilla, and agave nectar to the curdled mixture and whisk.
  3. In a separate bowl, combine all dry ingredients and whisk together.
  4. Mix wet ingredients into dry ingredients until well combined and let it sit for 10-15 minutes.
  5. Preheat the waffle iron and coat it with non-stick spray or vegan butter.
  6. Pour about ⅓ cup of batter onto the waffle iron and cook according to the manufacturer's instructions.
  7. Keep cooked waffles warm in a low oven until ready to serve.
  8. Serve immediately with desired toppings.
