Ingredients

Wet Ingredients

  • 1 cup unsweetened almond milk
  • 1 Tbsp lemon juice or white vinegar
  • ¼ cup non-dairy butter (melted or coconut oil)
  • tsp pure vanilla extract
  • 2 Tbsp agave nectar or maple syrup

Dry Ingredients

  • cup gluten-free flour blend
  • ¾ cup blue cornmeal
  • 2 Tbsp flaxseed meal
  • 1 pinch salt
  • tsp baking powder
  • 1 Tbsp sugar

Instructions

  1. Combine almond milk and lemon juice in a measuring cup and let it sit to curdle.
  2. Add melted butter, vanilla extract, and agave nectar to the curdled mixture and whisk.
  3. In a separate bowl, mix all dry ingredients together until well combined.
  4. Pour the wet mixture into the dry ingredients and mix until incorporated. Let it sit for 10-15 minutes.
  5. Preheat the waffle iron and coat it with non-stick spray.
  6. Pour about ½ cup of batter onto the hot waffle iron and cook according to the manufacturer's instructions.
  7. Keep cooked waffles warm in a single layer in a 200°F oven until ready to serve.
  8. Serve immediately with desired toppings and freeze leftovers for future use.
