Instructions
- Combine almond milk and lemon juice in a measuring cup and let it sit to curdle.
- Add melted butter, vanilla extract, and agave nectar to the curdled mixture and whisk.
- In a separate bowl, mix all dry ingredients together until well combined.
- Pour the wet mixture into the dry ingredients and mix until incorporated. Let it sit for 10-15 minutes.
- Preheat the waffle iron and coat it with non-stick spray.
- Pour about ½ cup of batter onto the hot waffle iron and cook according to the manufacturer's instructions.
- Keep cooked waffles warm in a single layer in a 200°F oven until ready to serve.
- Serve immediately with desired toppings and freeze leftovers for future use.
