Ingredients

The apples

  • 3 medium apples (2 tart, 1 sweet, peeled and cubed)
  • 1 Tbsp vegan butter or olive oil
  • 1-2 Tbsp brown sugar (optional)
  • ¼ tsp cinnamon

The waffles

  • 1 Tbsp flaxseed meal (to make flax egg)
  • 2 ½ Tbsp water (to make flax egg)
  • 1 Tbsp vegan butter (melted or substitute with avocado or coconut oil)
  • 1 scant cup unsweetened almond milk
  • 1 Tbsp maple syrup or agave (or honey if not vegan)
  • ¼ cup unsweetened applesauce or pumpkin puree
  • ¼ cup brown sugar
  • ¾ tsp cinnamon
  • ¼ tsp salt
  • ½ Tbsp baking powder
  • 1 cup whole-wheat pastry flour
  • ¼ cup oats

Instructions

  1. Sauté the cubed apples in a skillet with vegan butter, brown sugar, and cinnamon until softened and caramelized.
  2. Prepare the flax egg by mixing flaxseed meal with water and letting it rest for 5 minutes.
  3. In a bowl, combine the flax egg with maple syrup, applesauce, melted butter, and brown sugar, and whisk together.
  4. Add almond milk to the wet ingredients and stir well.
  5. Sift flour, baking powder, salt, and cinnamon over the wet ingredients and stir until just combined.
  6. Fold in oats and half of the sautéed apples. Adjust batter consistency with more almond milk if needed.
  7. Let the batter rest for 5 minutes while preheating the waffle iron.
  8. Spray the waffle iron with non-stick spray, pour in about ½ cup of batter, and cook according to the machine's instructions.
  9. Once cooked, place waffles on a cooling rack and serve warm with remaining apples and maple syrup.
