Vegan Apple Cinnamon Waffles

Instructions
- Sauté the cubed apples in a skillet with vegan butter, brown sugar, and cinnamon until softened and caramelized.
- Prepare the flax egg by mixing flaxseed meal with water and letting it rest for 5 minutes.
- In a bowl, combine the flax egg with maple syrup, applesauce, melted butter, and brown sugar, and whisk together.
- Add almond milk to the wet ingredients and stir well.
- Sift flour, baking powder, salt, and cinnamon over the wet ingredients and stir until just combined.
- Fold in oats and half of the sautéed apples. Adjust batter consistency with more almond milk if needed.
- Let the batter rest for 5 minutes while preheating the waffle iron.
- Spray the waffle iron with non-stick spray, pour in about ½ cup of batter, and cook according to the machine's instructions.
- Once cooked, place waffles on a cooling rack and serve warm with remaining apples and maple syrup.
