Instructions
- Preheat the waffle iron according to the manufacturer's instructions.
- Mix flax meal and water, letting it rest for 3 minutes.
- Blend all waffle ingredients until smooth.
- Spray or brush the waffle iron with oil.
- Pour 1/3 to 1/2 cup of batter onto the waffle iron and cook as per the manufacturer's instructions.
- Repeat with the remaining batter, adding water if needed.
- Serve waffles immediately or reheat in the waffle iron.
- For the apples, heat oil in a skillet, add sliced apples, lemon juice, cinnamon, and maple syrup.
- Sauté until apples are softened, about 10-15 minutes.
