Ingredients

The Waffles

  • 2 cups oat flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • 1 small yellow banana
  • 2 Tbsp flax meal
  • 5 Tbsp water
  • 2 Tbsp oil
  • cups milk of choice
  • 2 tsp pure vanilla extract
  • 2 Tbsp pure maple syrup

The Cinnamon Pan-Fried Apples

  • 4 medium apples
  • 1 Tbsp oil
  • ½ lemon juice
  • ½ tsp cinnamon
  • 2 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Mix flax meal and water, letting it rest for 3 minutes.
  3. Blend all waffle ingredients until smooth.
  4. Spray or brush the waffle iron with oil.
  5. Pour 1/3 to 1/2 cup of batter onto the waffle iron and cook as per the manufacturer's instructions.
  6. Repeat with the remaining batter, adding water if needed.
  7. Serve waffles immediately or reheat in the waffle iron.
  8. For the apples, heat oil in a skillet, add sliced apples, lemon juice, cinnamon, and maple syrup.
  9. Sauté until apples are softened, about 10-15 minutes.
