Ingredients

  • 1 ½ cups steel cut oats
  • 1 cup buckwheat groats
  • 3 cups buttermilk
  • 4 tablespoons salted butter, melted
  • ½ teaspoon salt
  • 2 to 3 tablespoons sugar
  • 2 teaspoons baking soda
  • 3 large eggs
  • ½ teaspoon vanilla (optional)

Instructions

  1. Combine steel cut oats, buckwheat groats, and buttermilk in a blender or bowl and refrigerate for 8-12 hours.
  2. Stir the mixture to loosen it and blend until smooth.
  3. Add melted butter, salt, sugar, baking soda, eggs, and vanilla to the blender and blend until combined.
  4. Cook the batter in a waffle maker or on a griddle as pancakes according to manufacturer's instructions.
