Instructions
- Mix the soy milk and apple cider vinegar in a bowl and let it sit to create vegan buttermilk.
- In another bowl, combine cassava flour, gluten free flour, baking soda, baking powder, and sea salt.
- Stir the melted coconut oil and vanilla extract into the buttermilk mixture.
- Combine the wet and dry ingredients, then add mashed bananas, chocolate chips, and nuts.
- Preheat the waffle maker according to your preference.
- Pour ¼ cup of batter into each side of the waffle maker and cook until done.
- Keep the cooked waffles warm in the oven while you finish the batter.
- Serve topped with extra bananas and chocolate chips, and maple syrup if desired.
