Ingredients

  • 2 cups soy milk or other plant-based milk
  • 2 teaspoons apple cider vinegar or white vinegar
  • 87 grams cassava flour or oat flour
  • 1 ¼ cups all-purpose gluten free flour
  • ½ teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon sea salt
  • 2 tablespoons melted coconut oil or vegan butter
  • 1 teaspoon vanilla extract
  • 2 very ripe bananas, mashed
  • ½ cup chocolate chips
  • ½ cup chopped nuts (walnuts or pecans)

Instructions

  1. Mix the soy milk and apple cider vinegar in a bowl and let it sit to create vegan buttermilk.
  2. In another bowl, combine cassava flour, gluten free flour, baking soda, baking powder, and sea salt.
  3. Stir the melted coconut oil and vanilla extract into the buttermilk mixture.
  4. Combine the wet and dry ingredients, then add mashed bananas, chocolate chips, and nuts.
  5. Preheat the waffle maker according to your preference.
  6. Pour ¼ cup of batter into each side of the waffle maker and cook until done.
  7. Keep the cooked waffles warm in the oven while you finish the batter.
  8. Serve topped with extra bananas and chocolate chips, and maple syrup if desired.
