Instructions
- Prepare the chicken by patting it dry and cutting it into cubes.
- Heat olive oil in a deep skillet over medium-high heat and cook the chicken with salt and pepper until almost cooked through.
- Remove the chicken and set aside.
- In the same skillet, add butter, onion, mushrooms, and garlic, cooking until the onions are translucent.
- Add orzo and toast it lightly for about 3 minutes.
- Pour in marsala wine and chicken broth, bringing to a boil for 2 minutes.
- Reduce heat, add the chicken back, cover, and cook for 12 minutes until orzo is cooked.
- Stir in coconut milk or heavy cream and parsley, adjust seasonings, then serve.
