Ingredients

  • 1 lb Boneless Skinless Chicken Breast
  • 2 Tbsp Olive Oil
  • 1 tsp Kosher Salt
  • 1 tsp Ground Black Pepper
  • 3 Tbsp Butter
  • 1 large White Onion
  • 12-16 oz Mushrooms
  • 4 cloves Garlic
  • 1 cup Orzo
  • 1 cup Marsala Wine
  • cup Chicken Broth
  • cup Full-Fat Coconut Milk or Heavy Cream
  • 1 cup Italian Parsley

Instructions

  1. Prepare the chicken by patting it dry and cutting it into cubes.
  2. Heat olive oil in a deep skillet over medium-high heat and cook the chicken with salt and pepper until almost cooked through.
  3. Remove the chicken and set aside.
  4. In the same skillet, add butter, onion, mushrooms, and garlic, cooking until the onions are translucent.
  5. Add orzo and toast it lightly for about 3 minutes.
  6. Pour in marsala wine and chicken broth, bringing to a boil for 2 minutes.
  7. Reduce heat, add the chicken back, cover, and cook for 12 minutes until orzo is cooked.
  8. Stir in coconut milk or heavy cream and parsley, adjust seasonings, then serve.
