Ingredients

The chicken

  • 1 lb organic boneless chicken breast
  • 1 tsp black pepper
  • ½ tsp sea salt
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 3 tbsp all-purpose flour
  • 1 tbsp olive oil

The sauce

  • 3 tbsp butter
  • 3 tsp minced garlic
  • 5 oz fresh mushrooms, sliced
  • cup dry marsala wine
  • cup organic chicken stock
  • cup heavy whipping cream
  • 1 tsp Worcestershire sauce
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp ground thyme

Instructions

  1. Slice the chicken breast in half lengthwise and season with black pepper, salt, ground cumin, and smoked paprika. Coat with flour.
  2. Heat olive oil in a skillet over medium heat and cook the chicken for 4 minutes on each side, then set aside.
  3. Remove excess oil from the skillet and lower the heat. Add butter, flour, minced garlic, and mushrooms, cooking for 3 minutes.
  4. Add marsala wine and chicken stock to the skillet, cooking for 4 minutes.
  5. Stir in heavy whipping cream, Worcestershire sauce, oregano, garlic powder, and ground thyme, allowing to cook for 7 minutes.
  6. Return the cooked chicken to the sauce and simmer for about 3 minutes before serving.
