Ingredients

Dry Ingredients

  • 2 cups all-purpose flour

Wet Ingredients

  • 1 large egg
  • cup sunflower oil
  • ½ cup unsweetened applesauce
  • 3 tablespoons fresh lemon juice
  • ¾ cup unsweetened almond milk
  • 1 teaspoon vanilla extract

Glaze

  • cup powdered sugar
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons water
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350ºF and prepare a 9×5-inch loaf pan with cooking spray and parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, poppy seeds, salt, and lemon zest.
  3. In a large bowl, whisk the egg and brown sugar until combined, then drizzle in the oil while whisking.
  4. Add the applesauce, lemon juice, almond milk, and vanilla to the egg mixture and whisk until combined.
  5. Combine the dry ingredients with the wet ingredients and mix until just combined.
  6. Transfer the batter to the prepared loaf pan and bake for 15 minutes.
  7. After 15 minutes, cover the bread with aluminum foil and bake for an additional 20-22 minutes, checking for doneness with a toothpick.
  8. Prepare the glaze by mixing powdered sugar, lemon juice, water, and lemon zest until smooth.
  9. Let the bread cool for 5-10 minutes before removing it from the pan, then allow it to cool completely before drizzling with glaze.
  10. Slice and serve.
