Spinach Cheese Ravioli

Ingredients

The pasta

  • 4 large eggs
  • 1 T water
  • 3 ½ cups all purpose flour
  • ½ teaspoon salt

The filling

  • 1 bunch fresh spinach
  • ½ medium onion, minced
  • 1 T olive oil
  • ¾ cup ricotta cheese
  • ¾ cup freshly grated Parmigiano-Reggiano cheese
  • ¼ cup shredded mozzarella cheese
  • 1 large egg yolk
  • to taste salt and pepper

Instructions

  1. Mix eggs, water, flour, and salt in a mixer bowl, then knead the dough and let it rest.
  2. Prepare the filling by wilting spinach, cooking onion, and mixing with cheeses and egg yolk.
  3. Roll out pasta sheets and place filling in small balls, then seal and cut into ravioli.
  4. Boil ravioli in salted water for 5-6 minutes, then strain and serve with sauce.
