Garlic Tahini Tofu & Broccoli Rice

Ingredients

The tofu and broccoli

  • 1 16oz block extra-firm tofu, drained/pressed and cubed
  • 1 head broccoli, pulsed finely in food processor
  • 1 tbsp butter or olive oil
  • 2 cloves garlic, minced
  • ¼ tsp salt

The sauce

  • 3 tbsp tahini
  • 2 tbsp water
  • 1 tbsp fresh lemon juice
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1 large clove garlic

Instructions

  1. Drain and press the tofu.
  2. Preheat the oven to 350°F and prepare a baking sheet with cooking spray.
  3. Spread cubed tofu on the baking sheet, season with salt, and bake for 30 minutes.
  4. Melt butter in a skillet over medium heat and pulse broccoli in a food processor until finely ground.
  5. Add the pulsed broccoli to the skillet and sauté for 10 minutes, stirring frequently.
  6. Add minced garlic and salt to the broccoli and sauté for an additional 5 minutes.
  7. Blend the sauce ingredients in a blender or food processor until smooth.
  8. Serve by placing a scoop of broccoli on a plate, topping with tofu, and drizzling with sauce.
