Garlic Tahini Tofu & Broccoli Rice

The tofu and broccoli

extra-firm tofu, drained/pressed and cubed

broccoli, pulsed finely in food processor

The sauce

tahini
-

tbsp
water

fresh lemon juice

soy sauce

Instructions
- Drain and press the tofu.
- Preheat the oven to 350°F and prepare a baking sheet with cooking spray.
- Spread cubed tofu on the baking sheet, season with salt, and bake for 30 minutes.
- Melt butter in a skillet over medium heat and pulse broccoli in a food processor until finely ground.
- Add the pulsed broccoli to the skillet and sauté for 10 minutes, stirring frequently.
- Add minced garlic and salt to the broccoli and sauté for an additional 5 minutes.
- Blend the sauce ingredients in a blender or food processor until smooth.
- Serve by placing a scoop of broccoli on a plate, topping with tofu, and drizzling with sauce.
