Ingredients

  • 6 slices Thick Cut Bacon, cooked or uncooked, cut in bite-sized pieces
  • 3 Tablespoons Butter, unsalted
  • 4 cups Chicken Broth, low sodium
  • ½ cup Heavy Cream or Half and Half
  • 1 packet Ranch Dressing Powder (3 Tbsp)
  • 1 teaspoon Garlic Powder
  • 16 oz Penne Pasta (or rotini, ziti, etc.)
  • 2 (8 oz) Boneless Skinless Chicken Breast, cubed slightly larger than bite sized
  • 8 oz Cream Cheese, cubed
  • 1 cup Sharp Cheddar Cheese, shredded (optional)

Instructions

  1. Prepare all ingredients before starting.
  2. If using uncooked bacon, sauté it in the Instant Pot until done, then remove and drain fat.
  3. Add butter and a splash of broth to the pot, scraping the bottom.
  4. Add broth, heavy cream, ranch powder, and garlic powder, and stir well.
  5. Stir in the pasta.
  6. Add the chicken and cream cheese, submerging them without stirring.
  7. Cancel the sauté function and seal the pot.
  8. Set to pressure cook for 5 minutes.
  9. Release the pressure carefully when done.
  10. Stir the mixture, it will be soupy initially.
  11. Stir in the cheese until melted, then mix in the bacon.
  12. Serve warm.
