Mediterranean Cauliflower Rice

Instructions
- If using a head of cauliflower, cut it into chunks and process in a food processor until it resembles rice.
- Wrap the processed cauliflower in a towel and squeeze out excess moisture.
- Toast the almonds in a skillet over medium heat until golden and fragrant, then set aside.
- In the same skillet, heat olive oil and cook the garlic until fragrant.
- Add the cauliflower rice, red pepper flakes, and salt to the skillet, stirring occasionally until heated through and golden.
- Remove from heat and stir in the toasted almonds, parsley, and lemon juice. Season with salt and pepper to taste.
