Mediterranean Cauliflower Rice

Ingredients

The base

  • 1 medium-to-large head cauliflower
  • ½ cup sliced almonds
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • ¼ teaspoon fine sea salt
  • 1 tablespoon lemon juice
  • ½ cup chopped flat-leaf parsley
  • to taste freshly ground black pepper

Seasoning

  • a pinch red pepper flakes

Instructions

  1. If using a head of cauliflower, cut it into chunks and process in a food processor until it resembles rice.
  2. Wrap the processed cauliflower in a towel and squeeze out excess moisture.
  3. Toast the almonds in a skillet over medium heat until golden and fragrant, then set aside.
  4. In the same skillet, heat olive oil and cook the garlic until fragrant.
  5. Add the cauliflower rice, red pepper flakes, and salt to the skillet, stirring occasionally until heated through and golden.
  6. Remove from heat and stir in the toasted almonds, parsley, and lemon juice. Season with salt and pepper to taste.
