Prosciutto-Wrapped Baked Chicken

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts
  • 8–12 slices prosciutto
  • 1/4 cup dry white wine

The sauce

  • 4 tablespoons melted butter
  • 1 clove garlic
  • 1 tablespoon finely-chopped fresh sage
  • 1 pinch crushed red pepper flakes

Seasoning and garnishes

  • to taste Kosher salt
  • to taste freshly-cracked black pepper
  • optional fresh lemon wedges
  • optional chopped fresh chives
  • optional grated Parmesan cheese
  • optional extra crushed red pepper flakes

Instructions

  1. Brine the chicken by dissolving 1/4 cup kosher salt in 1 quart of warm water, then soak the chicken for 15 minutes.
  2. Preheat the oven to 450°F.
  3. Wrap each chicken breast with 2-3 slices of prosciutto.
  4. Place the wrapped chicken in a baking dish and brush with 1 tablespoon of melted butter, then season with salt and pepper.
  5. Bake the chicken for 18-20 minutes until cooked through.
  6. While the chicken is baking, prepare the sauce by melting the remaining butter in a small pan, then sauté garlic, sage, and crushed red pepper flakes until the sage is crispy.
  7. Add the white wine to the sauce and simmer for 5 minutes.
  8. Once the chicken is done, let it rest for 5-10 minutes, then spoon the sage-butter sauce over the chicken and serve with lemon wedges.
