Prosciutto-Wrapped Baked Chicken

Instructions
- Brine the chicken by dissolving 1/4 cup kosher salt in 1 quart of warm water, then soak the chicken for 15 minutes.
- Preheat the oven to 450°F.
- Wrap each chicken breast with 2-3 slices of prosciutto.
- Place the wrapped chicken in a baking dish and brush with 1 tablespoon of melted butter, then season with salt and pepper.
- Bake the chicken for 18-20 minutes until cooked through.
- While the chicken is baking, prepare the sauce by melting the remaining butter in a small pan, then sauté garlic, sage, and crushed red pepper flakes until the sage is crispy.
- Add the white wine to the sauce and simmer for 5 minutes.
- Once the chicken is done, let it rest for 5-10 minutes, then spoon the sage-butter sauce over the chicken and serve with lemon wedges.
