Stuffed Chicken Breast with Prosciutto, Pears and Brie

Ingredients

  • 2 large boneless, skinless chicken breasts
  • to taste Kosher salt and pepper
  • 1 teaspoon olive oil
  • 1/4 cup chopped onion
  • 2 slices prosciutto
  • 2 leaves sage
  • 1 medium pear
  • 2 oz Brie
  • 1/4 cup baby arugula
  • as needed cooking spray
  • as needed cooking twine

Instructions

  1. Preheat the oven to 375°F.
  2. Slice a pocket into the side of each chicken breast.
  3. Season the chicken inside and out with salt and pepper.
  4. Heat olive oil in a skillet over medium heat; add onions and prosciutto and sauté until golden.
  5. Add sage and pear to the skillet, season with salt, and cook until translucent.
  6. Remove from heat and stir in arugula; allow to cool slightly.
  7. Stuff each chicken breast with the filling and Brie, then tie closed with cooking twine.
  8. Sear the chicken in an oven-proof skillet until golden brown on all sides.
  9. Place the skillet in the oven, cover with foil, and bake for 23 to 25 minutes.
  10. Slice each breast in half to serve.
