Stuffed Chicken Breast with Prosciutto, Pears and Brie

Instructions
- Preheat the oven to 375°F.
- Slice a pocket into the side of each chicken breast.
- Season the chicken inside and out with salt and pepper.
- Heat olive oil in a skillet over medium heat; add onions and prosciutto and sauté until golden.
- Add sage and pear to the skillet, season with salt, and cook until translucent.
- Remove from heat and stir in arugula; allow to cool slightly.
- Stuff each chicken breast with the filling and Brie, then tie closed with cooking twine.
- Sear the chicken in an oven-proof skillet until golden brown on all sides.
- Place the skillet in the oven, cover with foil, and bake for 23 to 25 minutes.
- Slice each breast in half to serve.
